The COHARA promises a most interesting and entertaining show this year during the 14th Kumbira with a total of twenty-three (23) competing events both for the professional and student categories, to be held at The Atrium of Limketkai Mall come August 18 to 20, 2010.
As prelude to this big yearly event, the “2nd Sinuglaw Festival” is set on July 1 to 31, 2010, (the first was a one-day affair in 2004 held back to back with the 8th Kumbira). This month-long activity under the auspices of COHARA will be participated by thirty-seven (37) strong members in Cagayan de Oro city who are now in the thick of preparations to make sure that they give diners no room for complaints when they come to their respective restaurants next month. This particular festival is aimed to identify and promote the “sinuglaw” as a truly Kagay-anon dish that we would like to offer a taste of to guests, tourists and locals alike.
“Sinuglaw “ is a combination of sinugba and kinilaw. “Sinugba” refers to the grilled pork sliced into bite-size pieces that is already a dish in itself, while “kinilaw” is the raw fish soaked slightly in coconut vinegar merged with onions, suwa (native lime), tabon-tabon, ginger, and salt.(Sometimes, either mayonnaise or coconut milk is used). All these are mixed together and voila! That is SINUGLAW! The use of ‘tabon-tabon’ and ‘suwa’ gives the distinctive feature of a Kagay-an Sinuglaw.
An orientation for all participating establishments was done last May 20 at the VIP Hotel, by COHARA President and Bigby’s Proprietor, Mrs. Joanna Cris L. Yu. Present were representatives from Bigby’s Café, The VIP Hotel, Max’s Restaurant, Casa Crystalla’s Mom’s Corner, Chali Beach Resort, Pryce Plaza, Hotel Conchita, Sler’s, Grand City Hotel , Miami Inn, Consuelo Steakhouse, Kagay-anon Restaurant, La Ilongga, Dynasty Court Hotel, Mallberry Suites, and Cucina de Oro.
So, mark your calendars now to remind you of the forthcoming “Sinuglaw Festival” Month of July all around the hotels and restaurants in the city, and of course, the exciting three-day Kumbira 2010 on August 18 to 20 at the Limketkai Mall.
